Ingredients:
On my last trip to the grocery store, Publix had a great sale on their brand tomato sauce. Buying two 8oz cans saved more money over buying one 15oz can. So for this pot of chili I ended up using four 8oz cans in place of the two 15oz cans I normally use. I also used to use canned tomatoes but since we have been buying co-op bags this season, I have plenty tomatoes diced up and packaged in the freezer to use.
Start by seasoning the beef with chili powder, brown, then drain if necessary. I always buy very lean ground beef (93/7 or 94/6) so by the time it’s browned, there’s next to no oil left therefore I rarely need to drain the beef.
In one pot, combine all ingredients and stir. Heat to a boil, then reduce the heat and simmer. I simmered my pot for about 20 minutes. I always eat my chili with some shredded cheddar cheese, a dollop of sour cream (which I was missing since we ran out) and a slice of whole wheat bread to sop it all up! Enjoy!
